Paris and the Macarons

I have lived in Paris for a while and was amazed to see the almost cult like status of the macaron. They are sold in almost every pâtisserie, but if you can afford it, you buy macarons from Ladurée, Hermé or Fauchon.
The Paris macaron is the creation of Pierre Desfontaines of the pâtisserie Ladurée, it is composed of two almond meringue discs filled with a layer of buttercream, jam, or ganache filling.
Macarons come is many flavors and colors. Traditionally raspberry and chocolate, more recently in truffle, green tea and other more imaginative flavors.
If you want to see how to make macarons, watch the video or visit David Leibovitz's blog.
