Liquid Nitrogen Ice Cream
Liquid Nitrogen (LN2) Ice Cream is getting to be a real trend. First it was the thing you could only get in the restaurants of molecular cooks like Heston Blumenthal or Ferran Adria. Now LN2 parlours are becoming mainstream. In Camden Town in London: Chin-Chin Laboratorists for instance.
So what is the big deal, well, because liquid nitrogen has a boiling point of -195 degrees Celsius, the stuff that you are freezing will not contain larger size ice crystals so it is the smoothest ice cream you have ever tasted.
